Success!

It’s not a difficult dish but I could never get it to taste “just right”

…until now!

What is it, you ask?

Arroz con leche (rice with milk) is one of the most popular desserts in the Latin world. This simple sweet is supreme comfort food.

It’s been tricky to find a recipe that gave the texture I love -kind of like a pudding- and the perfect subtle flavor -dark vanilla, cinnamon, and raw sugar- and to get the right timing -this took 1 hour of constant stirring.

Cooking at 5600 feet elevation takes a bit of tweaking on recipies.

There is not really dessert food here.  So, India (my little pastry chef apprentice) and I  have been a little antsy to bake up some delicious sweet treats.  But, my baking supplies are still packed up tight (don’t have a spot to unpack them at this time) and I don’t really have to time to mess with the nuances of high elevation baking.

(then I have this friend Jessica who is one of my most fav cake divas that keeps tempting us with her sweet creations.  mmmm…  it’s almost enough to get me on a plane to Rhode Island just to swipe some)

Pfffttt… these RED VELVET CUPCAKES and PEANUT BUTTER FILLED CHOCOLATE CUCAKES made by Jessica make my rice pudding look sad and ridiculous.  😉

But a girl can drool …I mean dream.

    REMINDS ME, MY MOM (NANA) USE TO MAKE A GOOD RICE PUDDING.

    MMMMMMMmmmm, now I am going to be dreaming of tapioca pudding all day. Cam, your arroz con leche looks delish! And, Jess, well, holy crow, those look simply spectacular!!! My question is, have you made any of Jeff’s fav cake? Seeing as I cannot remember the actual name, I’m going to do us both a favor, and leave it at that. tee hee hee
